The crunch of almonds amid the softness of rice and beans. These tasty burgers may be served on their own or with a chutney or made into a sandwich. I served mine between slices of toast with Vegenaise and sauteed onions.

So easy and delicious, this is one of my husband's winter favorites. We begin making it as soon as the vegetable garden is put to bed for the winter and don't stop until all the butternut squash is gone. The squash vine borers were bad this year so we are replacing the squash with sweet potatoes.
This easy to make, spicy tofu dish will make a tofu lover out of anybody. If you are vegan you can just leave out neufchatel cheese. I like to serve it with sour cream and a side of re-fried black beans.
This dish makes its own gravy, mingled with veggies and French lentils, under a crust of creamy, crisped mashed potatoes. It turned out so well for Thanksgiving, I plan to make it again for Christmas.
