Squash, white beans and chestnuts (!) on a bed of caramelized onions, with an herbed bread crumb topping. Lucy's mother made this special dish for Thanksgiving.
This is a delightfully tasty and healthful soup. Chock full of hearty vegetables and delicate seasonings to keep your taste-buds joyous and your tummy content!
So easy and delicious, this is one of my husband's winter favorites. We begin making it as soon as the vegetable garden is put to bed for the winter and don't stop until all the butternut squash is gone. The squash vine borers were bad this year so we are replacing the squash with sweet potatoes.
This flavorful soup was served at a retreat at Great Vow Monastery. You'll love the color ---it's an unusual bright green, and when you stir in the cubes of orange squash, the effect is quite beautiful!
