Hearty Vegetable Corn Cakes

This simple supper is a family favorite. When our son was little I left out the scallions and topped them with applesauce. When his tastes matured we added back the scallions. We kept the applesauce but also added salsa, which allows each of us to come up with our own combination of cool and hot depending on the mood of the moment.

Veggie Stir-fry with Golden Sauce

This easy supper can be made with any veggies that lend themselves to a stir-fry.

Golden Sauce

This versatile sauce can be served over stir-fried veggies and rice, added to burritos for a cheesy taste, or served on toast as a sort of rarebit. It can also be made into a macaroni casserole: boil 5 oz. pasta, combine with Golden Sauce and steamed veggies, top with crumbs, and bake 20 minutes.
