Imagine the flavors of banana,walnut, apple, maple, and dates all together in one bread---yum! The original version was made with spelt flour. Here's a version for the gluten-sensitive among us, made with the flours I had on hand.
Wendy Gabbe Day brought these extraordinary cupcakes to the NWVEG Compassionate Thanksgiving potluck in Portland. Determined to track down the recipe, I went to her website and there they were. I made them for my husband's birthday and he found them as irresistible as I did. The garbanzo bean flour was easy to find at New Seasons. They have oat flour too, but I really prefer the texture I get when I grind my own.
This moist, tasty pumpkin bread was no doubt intended for the winter holidays. I found some pumpkin in my freezer in June, however, turned it into loaves, and it was popular at our summer potluck!
