Banana Blueberry Muffins--- Gluten Free

These moist and flavorful muffins are hard to resist!


1 medium organic banana mashed
1 large egg (or egg substitute)

120 ml 1/2 cup (milk), soy milk, almond milk or hemp milk
59 ml 1/4 cup walnut oil
2 ml 1/2 tsp real vanilla
59 ml 1/4 cup pure maple syrup
470 ml 2 cups "Bob's Red Mill" Gluten- & Dairy-Free Biscuit/Baking Mix
1 ml 1/4 tsp sea salt
240 ml 1 cup frozen organic blueberries


Mix dry ingredients and set aside. In large mixing bowl, blend together banana, oil, syrup, vanilla and egg. Add in frozen berries. Then stir in dry ingredients and mix until blended. Do not over stir.

Grease a 12 count muffin pan and gently spoon in batter. Bake at 350 degrees for 15-18 minutes. (use a toothpick to test when muffins are fully baked).
