A fudgy, nutty brownie that needs no baking!
240 ml 1 c. pecans or walnuts
240 ml1 c. dates
74 ml5 T. raw cacao (cocoa) powder
59 ml4 T. shredded unsweetened coconut
30 ml2 T. honey or agave nectar
1/2 to 1 tsp. cinnamon
1 ml1/4 tsp. salt---maybe*
In a food processor, process pecans until small and crumbly.
Add dates and process again until the mixture sticks together.
Add remaining ingredients and process until the mixture is a dark chocolatey brown, but don't let it get buttery.
Press into a small dish or cake pan (about 4 x 6 inches). Refrigerate for a couple of hours to stiffen up.
Store in the refrigerator.
* The recipe called for 1/4 tsp. salt but when I made the brownies they tasted too salty to me. Next time I may leave it out, as in our similar recipe, Energy Orbs, or use just a pinch.---Eve

a couple of changes
When I made these yesterday the taste seemed to have a bit of a sharp edge, I assume from the cocoa powder, so I drizzled in some more agave nectar and a handful of chocolate chips. The brownies were wonderful though a bit wet. Next time I think I will reduce the cocoa powder to 4 T. and see how that goes.
