Tomato Soup with White Beans

Mary sent this healthy soup from the Food for Life Class.


350 ml 1 & 1/2 c. water or vegetable broth divided (1 c. and 1/2 c.)
1 small onion, chopped
240 ml1 c. finely diced celery
2 ml1/2 tsp paprika
2 ml1/2 tsp. dried basil
2 ml1/2 tsp. dried thyme
1 ml1/4 tsp. black pepper
350 ml1 & 1/2 c. crushed fresh tomatoes or 15-oz. can
350 ml1 & 1/2 c. cooked white beans and 1/2 c. extra broth or 15-oz can, undrained
5-6 T. apple juice concentrate
1/4-1/2 tsp. salt


Combine 1/2 c. water or broth with onion, paprika, basil, thyme, and black pepper in a large pot over medium-high heat, stirring often, till onion is soft, 5 minutes. Reduce heat to medium. Stir in tomatoes, beans and their liquid, apple juice concentrate, and remaining cup of water or broth. Cover, simmer, stirring occasionally, 15 minutes.
