Curry-Ketchup Bean Burgers

Source:

Eat to Live, Joel Fuhrman----altered by Christel

Christel came up with this variation on a bean burger and it's become a favorite of hers. These little burgers keep well and can even be used as "travel food."

Ingredients:

for 12 burgers:

120 ml1/2 cup cashews
2 cans ( 2 x 425 ml tins ) kidney-beans ( washed and drained ) [two 14-oz. cans]
1 onion minced
59 ml4 tablespoons curry ketchup*
30 ml2 tablespoons old-fashioned rolled oats
Tamari to taste

Instructions:

I put all the ingredients in my food-processor and mix it into a dough-like-consistence.
Then I form 12 patties, place them on a baking sheet with parchment paper and bake them for 25 minutes at
350° F. Then I flip the patties and bake them for another 10 minutes.

You can keep them for a few days in the fridge and so you have burger-patties "on hand".

Notes:

*This condiment is popular in Germany, Belgium, Denmark and the Netherlands and can be found in some specialty shops elsewhere. If you can't find it where you are, there are recipes online for making your own.---Eve
