Inspired by a recipe in The Raw Food Gourmet, Gabrielle Chavez
Very tasty energy bars made of all good stuff.
470 ml 2 c. walnuts
350 ml1 & 1/2 c. shredded coconut
2 apples, cored and chopped
240 ml1 c. raisins and/or dates*
5 ml1 tsp. vanilla
240 ml1 c. currants or other dried fruit
salt if desired
Chop nuts in a food processor. Combine them with the coconut in a large bowl.
Process the apples, vanilla, and raisins to a slurry. Pulse in the currants but do not blend them. Mix the slurry into the nuts and coconut.
Spread onto mesh dehydrator sheets and dry until crispy-pliable.
The original recipe adds gogi berries instead of currants and suggests other options: dried cranberries, cherries, blueberries, more raisins.
*Substituting dates for some of the raisins in the slurry makes it stick together better.
Feel free to try other nuts and try pears instead of apples.
