Tam An
A refreshing new version of an old favorite.
470 ml 2 c. cooked quinoa
2 apples, peeled and chopped
2 stalks celery, chopped
2 medium carrots, chopped
120 ml1/2 c. chopped walnuts or pecans
160 ml2/3 c. raisins
59 ml4 T. vegan mayonnaise
Mix all ingredients. Chill and serve on large lettuce or spinach leaves.
