Margaret's Daughter Betsy's Cream of Asparagus Soup

Margaret made it up---oops,it was her daughter Betsy who created it!

A very easy and satisfying cream soup recipe created by Margaret's daughter, Betsy. Margaret brought this to our Spring Potluck.

Ingredients: 

1 bunch asparagus
1 onion
3 potatoes
1 qt. vegetable stock
240 ml1 c. soy cream
dried onion
dried garlic
shallots
salt

Instructions: 

Cook the asparagus and onion until soft.

Cook the potatoes in the quart of stock.

Blend the cooked asparagus and onion in a blender. Add the cooked potatoes and broth and blend.

Season with about 2 T. dried onion and garlic granules, shallots, and salt to taste.

Just before serving, add the soy cream.
