Yellow Split Pea and Leek Soup

An easy, hearty soup to warm you up on a cold day.

Ingredients: 

470 ml 2 c. yellow split peas
1420 ml6 c. water
2 carrots, diced
1 red onion, diced
3 leeks, white and green parts diced separately
4 celery stalks, diced
2 ml1/2 tsp. sea salt
30 ml2 T. tamari

Instructions: 

Bring the water to a boil and add the split peas. Reduce the heat o medium low and cook until the peas are soft, about one hour.

When the peas are soft, add the carrots, onion and white parts of the leeks. Cook about 20 minutes until the vegetables are soft. Add celery and cook 5 minutes. Add salt, tamari, and the green part of the leeks and cook 5-10 minutes more.
