Kale Salad with Lemon Miso Dressing

Massage this special dressing into your kale for a simple and delicious salad.

Ingredients: 

large bunch of kale

1 small lemon, zested and juiced
30 ml2 T. miso
30 ml2 T. nutritional yeast
15 ml1 T. tahini
black pepper to taste

Instructions: 

Wash and stem the kale and tear it into small pieces.
Whisk together the dressing in a small bowl. Season to taste.
Massage the kale with dressing for about 5 minutes.
Add anything else you like (I added red pepper; the original recipe had corn and tarragon).
Let sit 20 minutes.
