Raw Food Made Easy, Jennifer Cornbleet
A delicious sweet cashew topping for your desserts.
240 ml 1 c. raw cashews, soaked and drained
89 ml6 T. water
30 ml2 T. maple syrup or agave nectar
5 ml1 tsp. vanilla extract or seeds of 1 vanilla bean
Place cashews, water, maple or agave syrup, and vanilla in a blender and process on high speed until smooth.
Chill at least 30 minutes before serving.
I keep any extra in a container in the freezer for the next occasion.
