Unbaked Granola Bars

Easy granola bars that are free of sugar, oil, and gluten, and they don't even need to be baked!

Ingredients:

Furthermore, the computer cannot currently translate from volume measurements to weight measurements, as is customary for dry ingredients in metric-unit recipes. 120 ml 1/2 c. dates, packed
79 ml1/3 c. nut butter
59 ml1/4 c. water
5 ml1 tsp. vanilla

470 ml2 c. rolled oats
79 ml1/3 c. coconut shreds
30 ml2 T. chia seeds
pinch salt
59 ml1/4 c. chocolate chips (optional) ---( I substituted about a half-cup of raisins)

Instructions: 

Place first four ingredients in a food processor and process until creamy. You may need to add 2-4 T. more water if the mixture seems dry.

Add the remaining five ingredients and process quickly (15-30 seconds) until everything is incorporated. Some oats will be pulverized, some whole.

Press the mixture into an 8x8 inch square pan or spread on a cutting board and cut into bars, or roll it into balls.

Refrigerate to firm up. Keep refrigerated or frozen.
