Benita brought this very creamy, melt-in-the-mouth fudge to our Fall Potluck.
240 ml 1 cup coconut oil
240 ml1 cup cocoa powder (unsweetened)
240 ml1 cup maple syrup
5 ml1 teaspoon vanilla extract
Heat the coconut oil briefly to liquefy it. You can put it in a bowl over a pot of hot water to do so.
Add all the rest of the ingredients to the liquified coconut oil in the bowl and whisk until smooth.
*Optionally: add 1/2 cup of coconut, dried fruit or nuts to fudge mixture and mix in well.
Pour fudge into a square pan lined with parchment paper. Put it in refrigerator to help firm up and so you can cut it into small pieces once firm. It's very rich and sweet so small pieces work best. Keep refrigerated until you serve it so coconut oil doesn't melt again.
*Optionally: sprinkle top with slivered almonds or other chopped nuts.
