Spicy Rice


adapted from Vegan Planet, Robin Robertson

This is a quick and easy supper and a favorite of my son. It is even quicker if you have rice on hand.---Eve


15 ml 1 T. olive oil
1 medium onion, finely chopped
1 small green pepper, chopped
3 garlic cloves, minced
3 vegetarian burgers, cut into little cubes
6-8 oz. mushrooms
4 ml3/4 tsp. Tabasco sauce
7 ml1 & 1/2 tsp. dried thyme, crumbled
2 ml1/2 tsp. salt
710 ml3 c. cooked rice


Heat the oil in a large saucepan over medium heat. Add the onion, mushrooms,
and bell pepper, cover, and cook until softened, about 5 minutes. Add the
garlic, burger cubes, Tabasco, thyme, and salt. Stir to combine and heat
through, about 5 minutes. Stir in the rice and cook until hot, 5 to 7 minutes.
Taste and adjust the seasonings, then serve hot.
