An unusual and very healthy treat.
240 ml 1 c. pitted prunes
120 ml1/2 c. pitted dates
89 ml6 T. almond butter
15 ml1 T. maple syrup
59 ml1/4 c, cocoa powder
finely grated coconut
Start the food processor and drop prunes and dates in one by one. Add the almond butter, maple syrup and cocoa powder and blend. Form into one-inch balls and roll them in grated coconut. Refrigerate at least 30 minutes.
To make them without a food processor, cut the dates and prunes in quarters and toss with some of the cocoa powder to keep them from sticking while you mince them. In a bowl, stir the remaining ingredients into the minced fruit. When well blended, form into one-inch balls and roll in the coconut.

A caution and a shortcut
I have discovered that sometimes "pitted prunes" still have pits, so I always cut mine in two just to check. Also, I no longer drop the prunes and dates in the processor one by one, just put them all in at once and chop. These are irresistibly delicious!
