Theresa made it up!
A very healthy new version of an old favorite dessert.
Topping:
120 ml1/2 c oat flour*
1/8-1/4 c maple syrup or agave syrup
120 ml1/2 c gluten free oats
30 ml2T walnut oil
7 ml1/2 T salt
120 ml1/2 cup chopped raw cashews
Filling:
4-5 of your favorite organic apples
1 organic pear
240 ml1 cup fresh or frozen organic blueberries
5 ml1t cinnamon
5 ml1t gluten free vanilla
5 ml1t lemon juice
Lightly oil a 9 x 9 square glass baking dish.
Slice apples thin with or without peel. Place in mixing bowl. Cut pear into small cubed pieces and add to apples,
then add berries. Stir. Add in remaining ingredients and mix well. Pour into lightly oiled baking dish.
Mix together in a medium mixing bowl the oil and syrup.Set aside Then mix flour, salt and oats in a separate bowl. Then add to oil mixture. Chop cashews very fine, add last. Stir all ingredients together to form a loose dough. Spoon on top of apples. Place on the middle rack in the oven.
Bake: 375F for 30 minutes.
Serves 6.
*No need to go out and buy oat flour----just spin some rolled oats in your blender or food processor.
