Nutritarian Cornbread

This tasty cornbread is high in protein and free of sugar and oil.

Ingredients: 

1/4 c.chopped dates, soaked in 1 c. unsweetened non-dairy milk
15 ml1 T. chia seeds
5 ml1 tsp. apple cider vinegar
240 ml1 c. garbanzo beans
180 ml3/4 c. cornmeal
22 ml1 & 1/2 T. nutritional yeast
15 ml1 T. baking powder

Instructions: 

Heat oven to 350 F.
Soak chopped dates in milk about 30 minutes. Add chia seeds and vinegar and let stand 10 minutes.

In a blender or food processor, blend garbanzo beans, cornmeal, nutritional yeast and baking powder. Place in a bowl.

Put the milk, chia, date mixture in the blender and blend until smooth. Add to the bowl with the beans and cornmeal and mix thoroughly.

Transfer to an 8-inch square baking pan.

Bake 25-30 minutes. Cool on a cooling rack.
