I had serious doubts about the whole idea of oil-free pesto but this recipe blew my preconceptions away! It's delicious and you can use it on anything--pasta, potatoes, sandwiches, as a dip, or even as a salad dressing.
240 ml 1 c. tightly packed basil leaves
1 garlic clove
350 ml1 & 1/2 c. or 1 can (15 oz.) navy/cannellini beans
30 ml2 T. nutritional yeast
2 -3 T. lemon juice
2 ml1/2 tsp. salt
Add garlic clove to processor and chop. Add the rest of the ingredients to taste and process until smooth.
