Flourless Chocolate Cake


Raw Food Made Easy, Jennifer Cornbleet

This cake is small but intense. No baking required---magical.


350 ml 1 & 1/2 c. walnuts
dash salt
10 medjool dates, pitted
79 ml1/3 c. unsweetened cocoa or carob powder
2 ml1/2 tsp. vanilla extract (optional)
10 ml2 tsp. water
120 ml1/2 c. fresh raspberries for garnish (optional)


Place the walnuts and salt in a food processor fitted with the S-blade and process until finely ground. Add the dates, cocoa powder, and optional vanilla and process until the mixture begins to stick together. Add the water and process briefly.

Transfer to a serving plate and form into a 5-inch round cake. Decorate with raspberries before serving, if desired.


yield: one 5-inch cake, 4 servings
