This recipe is so simple and yet so delicious that I want to share it!
- 1 package of dates (c. 250 grams*), pitted and coarsely chopped
- ¼ cup sunflower oil
- ¾ cup boiling water
- 1/2 tsp. vanilla
- 1 ½ cups self-rising flour or flour of choice with 1 teaspoon baking powder
- ½ cup (cane) sugar
- ½ cup walnuts, coarsely chopped
Preheat the oven to 350 degrees, grease muffin tins, or use paper or silicone muffin forms. In a bowl, combine the first four ingredients. In another bowl mix the remaining three. Stir everything together quickly and fold the mixture into the muffin tins. Bake about 25 minutes until tender and golden brown.
While eating the muffins, acknowledge the date palms, walnut trees, sunflower-, sugar cane and wheat fields.
*this is about 8 ounces or 1 & 1/2 cups
