Curried Pumpkin Soup


Hanna, with slight changes by Tam An

Tam An served this flavorful soup at a birthday dinner and everyone loved it.


230 g 1/2 lb. fresh mushrooms, sliced
120 ml1/2 c. chopped onion
30 ml2 T. all purpose flour
1/2 - 1 tsp. curry
710 ml3 c. vegetable broth
340 g12 oz. can soy milk
1 can (15oz) pumpkin
5 ml1 tsp. honey
2 ml1/2 tsp, salt
1 ml1/4 tsp. pepper
1 ml1/4 tsp. ground nutmeg


Saute mushrooms and onion until tender.
Add flour and curry and stir until blended.
Gradually add the broth. Boil. Cook and stir for several minutes until it thickens.
Add the rest of ingredients and heat to boiling.

I made this soup tonight. it was easy and just the thing for a cold winter night.
