Eve made it up
This simple, high-protein dish only needs 5 minutes in the microwave. The sauce is very flavorful.
about 2 c. cooked quinoa *
about 2 c. cooked chickpeas (garbanzo beans) or a 15 oz. can, rinsed
a few handfuls shredded kale
half of a 12 oz. jar of Maya Kaimal Madras Curry sauce, or any sauce you like
sunflower, pumpkin and sesame seeds
optional garnish: Walnut Parm
Mix the quinoa, kale and chickpeas together in a 1 & 1/2 qt. casserole bowl.
Spread the Curry sauce over the top.
Sprinkle with seeds
Cover and microwave for 5 minutes.
If desired, sprinkle with Walnut Parm at the table.
*If you don't have quinoa on hand, stir one cup quinoa into 2 cups water, bring to a boil, cover and cook 15 minutes. Fluff and let cool.
