Power Hungry, Camilla Saulsbury -- with changes by Eve
A hearty, nutritious energy bar. I like to keep a supply in the freezer and take one along when I head out for a walk.
240 ml 1 c. rolled oats
240 ml1 c. hemp hearts (shelled hemp seeds)
120 ml1/2 c. raisins
4 medjool dates, pitted
120 ml1/2 c. shredded coconut
120 ml1/2 c. nut or seed butter (peanut, cashew, almond, sunflower)
120 ml1/2 c. chocolate chips (optional)
1 ml1/8 tsp. salt
30 ml2 T. flaxseed meal soaked in 1/3 c. water
Preheat oven to 325 F.
Line an 8-inch square pan with parchment paper (or lightly oil the pan).
Stir the flaxseed meal into 1/3 c. water and let sit about 10 minutes until thick and viscous.
In a food processor, pulse oats, hemp hearts, raisins, dates, coconut and optional chocolate chips until finely chopped but not a paste.
Add salt, nut butter and flax-in-water and pulse until just combined.
Spread the mixture into the prepared pan. Bake 15 - 20 minutes or until golden brown at the edges.
Transfer to a wire rack and cool completely in the pan. Lifting the liner, move to a cutting board and cut into 12 (or more) bars.
I keep some of the bars in the fridge but also wrap many individually in waxed paper and keep them in a bag in the freezer for later.
