White beans and smoked tofu amid tomatoes, herbs and a chili pepper. "I adapted a recipe from the video by Attila Hildmann. He showed us how to make his beans but he didn't give amounts. So I guessed,and we enjoyed the dish."---Margaret
44 ml 3 T. olive oil
230 g1/2 lb. smoked tofu, cubed
1 onion
3 cloves garlic, minced
1 finely minced hot chili
handfuls of fresh chopped herbs: basil, thyme, rosemary
1 or 2 15-oz. cans tomatoes
2 15-oz. cans white beans
salt and white pepper to taste
3 slices bread, cubed
120 ml1/2 c. ground almonds (I used sunflower seeds)
canola oil
Saute the smoked tofu in the olive oil. When browned, add the onion, garlic, and hot chili. When onions are brown, add chopped herbs.
Stir in two cans of tomatoes (one might do--I like it juicy)
(Hildmann used some agave---I did not)
Add the white beans and salt and white pepper to taste.
Put the mixture into a baking dish and top with the cubed bread, ground almonds or sunflower seeds, and a sprinkle of canola oil.
Bake at 350 degrees F for 20 minutes---till bread is browned.
