The truffle strategy

We have a new cook joining our email circle----Laurie S. of Lake Oswego (here in the Portland area). She got interested after tasting the prune truffles I brought to a gathering recently. Just think how our project would grow if we could entice people with prune truffles everywhere...hmmm... Welcome, Laurie!

This week's new recipe is a hearty, whole-grain bread that happens to be gluten-free, so everybody who likes bread will be able to enjoy it. I am fortunate to have a VitaMix that grinds grain so I can make my own as needed (teff flour, millet flour, oat flour, etc.) If you don't have such a machine you can buy these things from Bob's Red Mill, and if you are in the Portland area you can be thrifty and buy them in bulk at Bob's Store.

As promised, I made the prune truffles for a gathering at our condo, and they were a hit. It was fun to have people guessing what was in them. I did make one change in the recipe--toasting the coconut before rolling the prunes, and I thought it was tasty. I've never had the raw coconut version, though. Because I'm a sweet tooth and a chocolate lover, next time I think I'd increase the cocoa measure to 1/3 cup and the maple syrup to 1.5 tablespoons. Excellent recipe and easy!
