Enjoying September goodness

Hello Mindful Cooks,

We are welcoming two new cooks to our email circle this time, TJ Christenson, here in Portland, and Lorna Morris in Liverpool, U.K. I was pleased to hear that TJ may be coming to our potlucks, possibly bringing a friend. Lorna loves "being inventive" in the kitchen and is up to the challenge of cooking dishes that will impress the omnivores in the family and help them onto the vegan path. She may be sending recipes to add to our collection!

There are several new recipes on our website now. The first was posted by Susan here in Portland, who came up with a mouth-watering smoothie, with photos worthy of Gourmet Magazine:

Glenn and Justina in Colorado sent several recipes for this season. Here is their Charred Fig and Arugula Salad with Lemon-Tofu Feta: Charred Fig & Arugula Salad with Lemon Tofu Feta.

I was so pleased to have a feta recipe, I also posted that part separately in our Cheese collection:

Thanks so much, Susan, Glenn and Justina! I am always amazed at the variety of dishes that are possible on a plant-based diet. New ideas just keep coming.

One more new idea comes from Christel in Germany, who says- One of the chances for future or present vegan dessert-chefs:
It's a vegan dessert course in the Rouxbe Cooking School. It's a serious commitment, 90 days, $600, but maybe you know someone with an above-average dedication to chocolate! The rest of us will just enjoy looking at the pictures:

After feasting our eyes on all those desserts, we can come back to the wisdom of our teacher who tells us we can get just as much joy from a simple meal if we receive it mindfully:
