Apple Carrot Salad

A very refreshing salad!---Eve


1 apple, cored and grated
470 ml2 c. grated carrot
120 ml1/2 c. currants
59 ml1/4 c. orange juice
30 ml2 T. lemon juice
15 ml1 T. lemon zest
7 ml1 & 1/2 tsp. grated fresh ginger
59 ml1/4 c. walnuts, chopped
15 ml1 T. shredded coconut


Combine apple, carrots, currants, orange juice, lemon juice, lemon zest, and ginger. Stir in the walnuts and coconut right before serving.
