GF Bananananda Bread

Imagine the flavors of banana,walnut, apple, maple, and dates all together in one bread---yum! The original version was made with spelt flour. Here's a version for the gluten-sensitive among us, made with the flours I had on hand.

Ingredients: 

Combine and mix dry ingredients:
470 ml2 c gluten-free flour (I used oat, millet, and Bob's All-Purpose flours)
2 ml1/2 tsp. xanthan gum*
120 ml1/2 c walnuts
20 ml4 tsp baking Powder
2 ml1/2 tsp cinnamon
1 ml1/4 tsp sea salt
1 ml1/4 tsp nutmeg

Combine wet ingredients and add to dry, mixing well:
240 ml1 c banana, mashed
120 ml1/2 c maple syrup
120 ml1/2 c apple sauce, sugar free
120 ml1/2 c date pieces
59 ml1/4 c safflower oil
2 ml1/2 tsp vanilla

Instructions: 

Bake one hour at 350 degrees. Makes one loaf.

*I don't know if xanthan gum is actually necessary in a quick bread. I added it just in case. If you make this bread successfully without it, I hope you'll let me know.

Today I made your Bananananda bread again. This time with a gluten-free selfmade flour-mix inspired by Lindsay Nixons ( Happy Herbivore ) friend Talia: http://happyherbivore.com/2012/04/what-gluten-free-celiac/

The flour-mix consists of ( basic mixture ):
3 cups brown rice flour
1 cup potato starch
1/2 cup tapioca flour
1 cup sorghum flour
and 5 tsp xanthan gum.

Instead of sorghum I used millet flour ( I have a flour mill at home ). Your recipe was absolutely easy to follow and it tastes....delicious!: )---Christel
P.S. It's wonderful warmed up, spread with applesauce.
