Indian Potato Salad

A potato salad with pizazz. Faith says," Can it get any better? Maybe, but I can't imagine! ...You will be famous if you bring this to a potluck."

Ingredients: 

950 ml 4 cups potatoes, peeled and cubed (I use russet or Yukon gold)
240 ml1 cup coarsely chopped onion
2 tbls olive oil
5 ml1 tsp cumin seeds
2 tsps curry powder
2 ml1/2 tsp turmeric powder
2 ml1/2 tsp salt
3 scallions, sliced
black pepper, freshly ground

Instructions: 

Steam potatoes until just tender. While potatoes are steaming, saute onions in olive oil for a minute. Add cumin seeds and toast for a minute.

Next, add the turmeric powder, curry powder, and salt and stir until it is mixed well. Remove from the heat.

When potatoes are done add them to the pan with the onions, etc. and thoroughly stir potatoes in mixture. When the potatoes are cooled a bit add the sliced scallions. Add pepper to taste.

Enjoy warm or cold.

Notes: 

Goes great with crunchy cucumbers and tomatoes on the side.
