Fresh Broad Bean Guacamole

Here is a dish that is wonderful in itself and that can also substitute for guacamole for those of us who live very far away from where avocados grow and want to eat more local products. Broad beans grow well here in Sweden and probably all of Europe and places with similar climate. They have a lovely taste and are rich in protein.----Kerstin

Ingredients: 

3 dl (1 & 1/4 c.) fresh broad beans (aka fava beans)
Approximately 0,5 dl (3T.) olive oil
1 clove garlic

Lemon juice and salt to taste
A few drops of Tabasco

Instructions: 

Remove beans from shells (3dl is after shelling.) Drop the beans into salted, boiling water and leave 1-2 minutes.
Mix the beans, olive oil and garlic together with a hand-held mxer.
Then add lemon juice, salt and tabasco to taste. Add more oil or water if needed, depending on how juicy the beans are.

Enjoy on bread, with Tacos etc. or as a side dish.

If you add fresh Basil you can turn it into a nutritious "Fresh Broad Bean Pesto".
