What shall we do with pesto?

We have a new member joining our email circle --- Joann Barber in Georgetown, Indiana--- a new state for us. Welcome, Joann! There are 157 of us now in 24 states and 14 countries.....amazing.

I don't have a new recipe this week so I am sending you two from our website that are my mind. My raised bed is bursting with basil so I'm about to make a big batch of pesto:
Basil Pesto

Now I wonder--- how do you all use pesto? I use it on pasta and I like to mix it into cooked rice . I would be glad to have more ideas, so please tell me what you do!

With another heat wave coming (92 degrees predicted this weekend)---- I'm thinking of salads. I think I'll soon be making the tasty potato salad Linda invented a couple of years ago:
Linda's Hearty Potato Salad

I just heard from Mindi in Manzanita who let me know that our teacher, Thich Nhat Hanh (who inspired our Mindful Cooking project) is now in California receiving special therapy to help him recover his speech. This is such good news! He is such a role model for perseverence and zest for life. You can read about it on the Plum Village website:

Portland people, we have a new potluck date: I hope you'll go mark your calendar right now for August 22nd. Anyone passing through town is welcome -- just email me for details.

Everyone, do send your pesto ideas and let us know what's happening in your kitchen these days!

Happy cooking,
Eve
