Tuna-free Sandwich Spread

This salad, popular at my house, does somewhat resemble tuna in texture and flavor. We like it in sandwiches with lettuce and tomato or as a scoop of salad atop some greens.--Eve

Baked Gigantes

This very tasty recipe came from my sister Mary, who found it in a newspaper. I had never heard of gigantes, and I've been avoiding lima beans ever since childhood when my mother served the Birdseye kind in the frozen package. But this recipe has changed all that. --Eve

"This is a dish whose variations have never failed that I know of. Its ethnic background stretches from approximately Lebanon to New Orleans to the Punjab.
