This ice cream is so healthy you can have it for breakfast!
Serves two
2 bananas (one for each person)
1 heaped tablespoon of nut butter or tahini
120 ml1/2 cup of non-dairy milk
Date or maple syrup for drizzling (optional)
1. Peel then break your bananas into one inch pieces and freeze them for at least two hours on a tray or separated in a freezer bag.
2. Place the frozen bananas in a food processor with your nut butter/tahini and a splash of non-dairy milk.
3. Pulse until smooth
4. Serve straight away with a drizzle of syrup.
Variations:
You can make this into all different kinds of ice cream by blending pistachios or hazelnuts until they are a nut butter before you begin. You can add in frozen cherries or strawberries too. In the picture I added a heaped tablespoon of cocoa powder to make chocolate nice cream. Try salted peanut butter or add extra dates with a pinch of salt to make caramel. Have fun!
