Tempeh Noodle Salad

A hearty and unusual lunch salad created by our tempeh expert!

Ingredients: 

1 package of udon noodles, cooked and cooled
1 glazed tempeh patty---see Glazed Tempeh
scallions, basil leaves, parsley (all chopped fine)
salt & pepper to taste

Instructions: 

Cook the noodles, rinse and add some sesame oil just to taste. Then add glazed tempeh cubes and garnish with chopped scallions, basil leaves and parsley. Adjust for seasonings.

* All ingredients can be adjusted for taste. We used black chana tempeh for this. Add/delete, eat and enjoy.
