Serendipity Soba


Vegan World Fusion Cuisine----sent in by Margaret

Here is the tasty dish Margaret brought to our Spring Potluck.


230 g 8 oz. soba noodles (Margaret used rice sticks)
1180 ml5 c. mixed garden vegetables (broccoli, red pepper, carrot, zucchini, etc.)
240 ml1 c. peanut sauce (recipe below)
15 ml1 T. toasted sesame oil
5 ml1 tsp. garlic or ginger
15 ml1 T. cilantro
10 ml2 tsp. crushed red pepper flakes
sea salt and black pepper to taste

sesame seeds for garnish

Primal Peanut Sauce--- blend together in a blender:
410 ml1 & 3/4 c. coconut milk
79 ml1/3 c. peanut butter
37 ml2 & 1/2 T. maple syrup
30 ml2 T. shoyu soy sauce
2 ml1/2 tsp. curry paste
1 ml1/4 tsp. red pepper flakes


Prepare the Primal Peanut Sauce.

Boil noodles in 8 c. water for 5 minutes. Drain and rinse in cold water. Place in large mixing bowl.

Steam the vegetables. Add to bowl along with remaining ingredients and mix well. Garnish with sesame seeds and serve warm or cold.
