Nutty Wild Rice with Mushrooms

Wild rice and brown rice with walnuts and lots of mushrooms -- delicious!


710 ml 3 cups vegetable broth
120 ml1/2 c. wild rice
180 ml3/4 c. brown rice
15 ml1 T. olive oil
1 whole shallot of medium onion, finely chopped
3 to 4 cloves garlic, minced
2 celery stalks, finely diced
1 small red bell pepper, finely diced
230 g8 oz. cremini mushrooms, sliced
110 g4 oz. fresh shiitake mushrooms, sliced *
59 ml1/4 c. minced fresh parsley
120 ml1/2 c. chopped walnuts, toasted if desired
salt and pepper to taste


Combine the broth and wild rice in a saucepan and bring to a slow boil. Stir in the brown rice, cover and simmer until water is absorbed, about 35 minutes. Set aside.

Heat the oil in a wide skillet. Add the shallot or onion and saute over medium-low heat until translucent.

Add the garlic, celery and bell pepper and saute until the mixture begins to turn golden.

Add the mushrooms and cook until they are wilted.

Add the rice mixture to the skillet along with the parsley, walnuts and salt and pepper to taste. Cook about 5 minutes more.


*I didn't have these so I just used more creminis.
