Maria's Anniversary Cake

A special treat to celebrate 8 years together!


240 ml 1 cup coconut milk
5 ml1 teaspoon white vinegar
300 ml1 & 1/4 cups whole wheat flour
160 ml2/3 cup brown sugar
30 ml2 tablespoons cacao powder
2 ml1/2 teaspoon baking powder
a bit of salt
79 ml1/3 cup canola oil
59 ml4 tablespoons beet juice
5 ml1 teaspoon vanilla extract
120 ml1/2 cup chocolate chips

For Frosting:
30 ml2 tablespoons tofutti cream cheese
30 ml2 tablespoons of coconut butter
30 ml2 tablespoons of warm water
120 ml1/2 cup coconut flakes
15 ml1 tablespoon palm sugar


Preheat the oven at 350. for 15 minutes. Grease a 6x10 inch mold lightly.

In a medium size bowl, mix together the milk and vinegar allowing it to curdle.

Meanwhile in a large bowl sift together the flour, cacao powder, chocholate chips, baking powder and salt. Stir in the sugar.

Once the milk has curdled, stir in the oil, beet juice and the extract. Whisk it well.

Slowly add the wet ingredients on to dry ingredients until all come together.

Place mix in the mold and bake for 40 min. Check with toothpick if fully baked. Take out of the oven and let it cool.

Frosting: mix all ingredients and let cool in fridge.

Once the cake has cooled, spread frosting on it.
