Margaret
A nutritious and warming soup for a cold day. Margaret made this for our Fall potluck.
3 medium onions
5 bunches spinach
1 & 1/2 quarts vegetable stock
44 ml3 T. heart healthy margarine
44 ml3 T. flour (spelt)
5 ml1 tsp. lemon juice
2 ml1/2 tsp. white pepper
1 ml1/8 tsp. nutmeg
almond milk
Cook spinach in boiling water about 5 minutes. Rinse with cold water, drain and set aside.
In a soup pot, melt the margarine. Cook onions over low heat until very soft.
Add flour, mix well and cook a bit. Add vegetable stock and heat to a boil.
Squeeze water out of spinach and add. Blend. Add white pepper, lemon and nutmeg.
Serve.
