Mango Pie


This pie combines standard flour-based pie crust with an unconventional filling: sliced mangoes! Sprinkled with vanilla, sugar, and ginger, it brings variety to the Thanksgiving table.


8 large mangoes, peeled, seeded, and sliced
15 ml1 tablespoon lime juice
240 ml1 cup white sugar
79 ml1/3 cup all-purpose flour
1 ml1/4 teaspoon salt
2-3 teaspoons vanilla extract
2 ml1/2 teaspoon ground ginger
1 double pie crust
59 ml1/4 cup vegan butter (approx)


Preheat oven to 350 degrees F.
Toss the sliced mango with the lime juice in a large bowl. In a separate bowl, toss together the sugar, flour, salt, and vanilla. Layer the sugar mixture and the sliced mangoes in several layers in the pie shell bottom. Dot with butter, then top with the other half of the pie crust. Prick with a fork.
Bake in preheated oven for 1 hour, until the mango has softened and the crust is golden brown.


We used dairy butter in our version, but I'm sure it would do great with vegan butter or no butter at all.
