A tasty loaf of beans and onions, made hearty with nuts and oats and light with tofu.
1 onion, chopped
2 cloves garlic, minced or pressed
280 g10 ounces smoked tofu
1 and 1/2 cup cooked kidney-beans
59 ml1/4 cup walnuts, finely ground
1 and 1/4 cup rolled oats ( ground in the blender )
44 ml3 tablespoons soy sauce
30 ml2 tablespoons ketchup
15 ml1 tablespoon Dijon mustard
Optional gravy suggestion from Eve: Bryanna's Yeast Gravy
Pre-heat oven to 350
Sauté onion and garlic on high heat in skillet with a little water or low sodium vegetable broth for 5 minutes
until tender.
Remove from heat and cool.
Mash tofu and kidney beans in large bowl.
Stir in cooked mixture and remaining ingredients, and combine well.
Spoon mixture into loaf pan lined out with parchment-paper.
Bake for 55 to 60 minutes
Unbaked it is a fabulous spread.---Christel

We discovered that this loaf goes beautifully with Bryanna's Yeast Gravy ----so I'm adding that suggestion to the recipe.
