The sunflower sprouts add protein to make it hearty and the unusual dressing is very tasty.---Eve
2 c. green peas
1 c. sunflower sprouts (1/2 c. before sprouting)
1/4 c. green onions, finely chopped
1 Fuji apple, finely chopped
1 T. mint leaves or fresh parsley, minced
Combine all ingredients in a large bowl. Toss with Garlic Tahini Dressing.
Garlic Tahini Dressing:
1/4 c. flax oil
2 T. lemon juice
2 T. water
1 & 1/2 T. raw tahini
1/2 tsp. salt
1/2 tsp. dried chervil
1/2 tsp. dried oregano
1 clove garlic
Mix all ingredients till smooth and creamy, using a whisk or blender. Adjust seasonings to taste.
I was surprised to discover that sunflower seeds that are out of the shell are still alive and will sprout. Just put 1/2 cup seeds in a container with a cup or two of water and let soak several hours or overnight. Then drain and rinse them. You can use them at this point or let them grow in your jar or bowl for a few days, rinsing them once a day.
