I just made this fresh arugula soup with arugula from my garden. So simple. If you like arugula, and I do, this is delicious and very refreshing. The blog I got it from says "Arugula is an excellent source of antioxidants, rich in vitamins A and C, folic acid, calcium, manganese, and magnesium. It contains carotenes and chlorophyll and is also a very good source of potassium, iron, zinc, riboflavin, and copper."
Recipe:
950 ml4 cups loosly packed arugula
30 ml2 tbsp minced red onion
120 ml1/2 cup pinenuts
1 avocado
30 ml2 tbsp fresh lemon juice
30 ml2 tbsp olive oil
2 ml1/2 tsp sea salt or herb salt
350 ml1 1/2 cups water
Blend all ingredients in food processor until smooth. Add water to the consistency you like. Serve cool and immediately.
I used some walnuts as I didn't have enough pine nuts. Yummy.
