Fat-free Balsamic-Raisin Vinaigrette

An unusual blend of sweet and tart flavors in a nutritious salad dressing.


120 ml 1/2 c. white balsamic vinegar
120 ml1/2 c. water
59 ml1/4 c. golden raisins, soaked in water until plump
1 large clove garlic
5 ml1 tsp. basil
5 ml1 tsp. oregano
30 ml2 T. Meyer lemon juice or 1 T. regular lemon juice
10 ml2 tsp. Chia seeds
5 ml1 tsp. mellow white miso or salt to taste


Combine all ingredients in a blender and process on high speed until liquified. Refrigerate until thickened slightly. Shake or stir before using.

Some suggested variations:
--for sweetness---substitute apple juice for water
--for spiciness---add 1 T. spicy mustard
--for creaminess----add 1 tsp. tahini or a T. of raw cashews.
