Coconut Cranberry Pecan Balls

A quick almond and pecan delight!


59 ml 1/4 c. shredded coconut
350 ml1 & 1/2 c. pecans, toasted
240 ml1 c. apple-juice-sweetened dried cranberries
120 ml1/2 c. almond butter
¼ C + 2T maple syrup (I use Grade B maple syrup)


Combine all ingredients except the coconut in the food processor until it forms a firm consistency. Roll into bite-sized balls and then roll in coconut. Enjoy right away or place in a sealed container in the refrigerator.
