Broccoli-Cranberry Salad

A zesty salad with a tangy-creamy dressing.


2 medium broccoli stalks
2 or 3 green onions, thinly sliced
120 ml1/2 c. grated carrots
120 ml1/2 c. raisins
59 ml1/4 c. dried cranberries
59 ml1/4 c. vegan mayonnaise (I use Vegenaise)
59 ml1/4 c. rice vinegar
1 ml1/4 tsp. black pepper


Cut florets into bite-sized pieces. Peel stems and cut in pieces. Transfer to salad bowl and add green onions, carrots, raisins, and cranberries. Whisk mayonnaise and vinegar together and add a grinding of fresh pepper. Toss dressing with salad and let stand 30 minutes for flavors to blend.
