A hearty salad that sparkles with flavors of lime and garlic.
710 ml 3 c. cooked black beans or 2 (15oz.) cans drained and rinsed
59 ml1/4 c. freshly squeezed lime juice
59 ml1/4 c. oil-free dressing (I used Oil-Free Italian Dressing)
1 clove garlic, minced
350 ml1 & 1/2 c. corn kernels, fresh or frozen
1 avocado, peeled, pitted and cut into 1/2 inch pieces
6 green onions, tops included, finely chopped
1 small hot pepper, seeded and minced (I used just a small piece)
optional:
120 ml1/2 c. chopped cilantro
2 medium tomatoes
chopped bell pepper, any color
Mix all ingredients well and serve.
