Best Ever Cookies



Ruth brought these cookies to the Spring, 2017 potluck in Portland, OR.


120 ml 1/2 c white sugar
120 ml1/2 c brown sugar
120 ml1/2 c vegan margarine
120 ml1/2 c oil
1 egg replacement (used flax and water)
470 ml2 c flour
2 ml1/2 t cream of tartar
2 ml1/2 t baking soda
2 ml1/2 t salt (optional and not used)
2 ml1/2 t vanilla extract
120 ml1/2 c quick oatmeal
120 ml1/2 c coconut
120 ml1/2 c crushed cereal (used granola)
59 ml1/4 c chopped nuts (optional and not used)


Mix first 5 ingredients with electric mixer until creamy. Then mix in the rest of the ingredients.
Drop by teaspoon onto baking sheet and flatten.
Bake at 325 degrees F for 12 minutes.
